Garlic Chicken

Cut up a whole chicken and season with salt and pepper. Brown the chicken pieces in a oven proof pan with a little bit of butter and olive oil. Removed the pieces when braised on both sides. Add about 20 pieces of garlic cloves, 2 stalks of celery and one grated carrot sauté in the pan juices just slightly, do not burn garlic or it will turn bitter. Stir in 2 cups chicken broth scrapping the bits off the bottom of the pan. Add the chicken back in the pan, add one can of corn and top with chopped cilantro. Place in 350 degree oven for about 45 minutes.

After 45 minutes, removed dish from oven, and take the chicken our placing it on something to put back in over to keep warm while you make the sauce in the dish you cooked the chicken in. Add about a half cup of cream and then Wisk in some flour into the pan juices and bring to boil creating thin gravy. Salt and pepper to taste. Put chicken back in pan and cook for an additional 5 to 7 minutes at 400 to finish off.
